Caesar Salad with Fava Bean Croutons

serves 4

You will need

200 g romaine lettuce

50 g parmesan shavings

Fava bean croutons

Fava Mill Ground Fava Beans

2 tablespoons olive oil

1 small clove garlic

pinch of salt

Dressing

4 anchovy fillets

1 garlic clove

1 egg yolk

1 tablespoon lemon juice

2 tablespoons Dijon mustard

1 dl freshly grated parmesan cheese

1 dl olive oil

2–3 tablespoons creme fraiche

Method

The dressing: Place the anchovy fillets, garlic, egg yolk, lemon juice, mustard and parmesan cheese in a bowl with high sides and process with a hand blender until smooth. Add the oil in a thin stream until the sauce thickens. Round up the taste by adding crème fraîche.

Rinse and dry the salad leaves and tear on the serving dish. Fry the Ground Fava Beans in olive oil until golden. Remove the pan from the heat and add grated garlic and salt, and mix together. Drizzle the leaves with dressing and sprinkle the croutons and parmesan shavings on top.


Tip: Fava bean croutons are tasty also when sprinkled on top of soup or salads.
